Rainbow Birthday Cake

I did it.  I turned 30.  I was seriously dreading it.  Thirty.  So old.

My 30th birthday was actually quite fabulous.  I think I like being thirty.  Or at least that’s what I keep telling my old self.  Isn’t that would old people do?  Convince themselves that being older is actually better.

Rainbow birthday cake definitely helped the transition from being a twenty-something to a thirty something…

Want to make your own cake to ease into being another year older?  Of course you do.

Gather your ingredients.  Two boxes of white cake mix and gel food coloring. (The drops won’t work.)  Sprinkles are optional.  Wait.  Who am I kidding?  Sprinkles are never optional.

Mix the cake mixes according to the directions on the box.

Divide the batter into 6 bowls (~1 1/2 cups in each).  Add ~1 teaspoon of gel food coloring to each.

I was quite giddy at this point.  Look at how pretty that mess is!  And then I realized someone would need to wash all of those dishes.  Giddy fail.

Now it’s time to bake.  I only have 2 round cake pans so this was definitely a  time consuming cake.  Bake ~15 minutes or until toothpick comes out clean. 

Words of wisdom from the ancient one:  Grease your pans VERY well…or this cake becomes a mess. (See purple and blue layer below.)  Use a knife to loosen the edges.  Let cool until you can touch the pan.  CAREFULLY flip onto a wire rack to cool completely.

Next it’s time for the frosting!  We used Nate’s mom’s secret frosting recipe.  Nate thinks I married him for his charming good looks and sense of humor.  It was actually for the frosting recipe.

Alternate cake and frosting.  Don’t worry if it doesn’t look super pretty.  It will still turn out just fine.

Nate applied a skim coat of frosting to the outside and then let it sit in the fridge while we went out for a fancy supper at Noodles.  We returned and Nate applied the final layer…and sprinkles.

Ike, of course, got in on the birthday action.  He was really more interested in eating the cake than having his picture taken.  He keeps mumbling something about an agent.

  4. Happy Birthday!! 30 is actually pretty fabulous! I'll be 31 in two weeks so I know from experience :-D You cake is super fabulous. Now I want to make one for my birthday as well! I always wish for marble cake but maybe this year it's time to up the amp :-)))

  13. Happy birthday to you!!! My, that cake looks delicious, I will give it a try this week. (although, Maybe a bit smaller ;). And don't fret about turning the big 3-0, just do like me, and forget birthdays from now on, I honestly have to think twice to remember my age. Love how you have Nate frosting the cake ;)

  14. Happy Birthday! That cake did turn out awesome! I'm turning 29 this year, so I'm not too far behind, although I'm really excited for my thirties. I always pictured them as much more relaxed and worry free...the decade that you really get to understand yourself (plus I think that's also supposed to be a woman's sexual peak).

  24. Happy Birthday! The cake turned out looking scrumptious! However, I am a bit suprised to see that Ike didn't turn out tye-dyed, lol (he must be a much more serious supervisor than I gave him credit for!)

    I think I'm going to request my hubby make me a rainbow cake for when I give birth in a couple weeks (I have gestational diabetes and can't even look at ANYTHING with sugar for the past 8 1/2 months!).

    Oh, and are you gonna share that secret frosting recipe???

    I've always used the cake pans that have the built-in cake-loosener piece that you turn around the whole pan and it basically cuts the cake free from the sides and bottom all at once. I'm not sure if they even make those ones anymore though (mine are from my mom and from garage sales).

  26. Happy bday!! I made one of these for my sisters birthday and it was delish! We made one with a recipe to use diet sprite, Cool whip and pudding frosting.... and it was wonderful and fat free!

  37. Happy birthday! Cake takes the sting out of just about anything, doesn't it? Turning 30 never bothered me; for me it was 25. Feel free to laugh at my 24 year old self; I laugh at her all the time. I've had quite a few birthdays since then, and I can assure you that your thirties will be awesome, and your forties will be even better!
