I was responsible for treat day last week. I think all of my co-workers reminded me that it was my treat day. Everyone loves treat day. Everyone also knows that I’m absent minded. (Like when I almost left these delicious cupcakes in the fridge on treat day. Luckily, I ran back for a Diet Coke. Phew.)
I headed on over to my cupcake board and picked out a recipe for Andes Mint Cupcakes.
Good choice. Good choice.
You can find the recipe over at Your Cup of Cake. I only wish I the skills to dream this stuff up.
I do want to share with you two of my favorite cupcake making weapons.
Weapon #1: Cupcake Batter Dispenser
This thing is awesome. I am the world’s messiest baker. Filling the cupcake liners is a breeze with this guy. I used it for all of the them except for the top right. See the difference?
Yes, it does look like Ike left a surprise in each liner but it shakes out. Trust me.
Weapon #2: Pampered Chef's Easy Accent Decorator
This little guy is super easy to use. I’ve tried frosting bags before and they are always such a mess. I just fill the tube with frosting using a spoon and squirt away.
The kit comes with multiple tips for many decorating options and a lid.
What are your favorite baking weapons? Tried any delicious cupcake recipes lately?
Mint "surprises"... God I almost lost my breakfast!
ReplyDeleteThose cupcakes look delicious!! That is the one time I am not tempted to lick the batter though after the Ike surprise reference!
ReplyDeleteYum! Those look delicious! I have never tried a batter dispenser, but I always use a large scoop to do my cupcakes. Then I have the same amount of batter in every cup and no spills! Left to my own devices, it would be a mess!
ReplyDeleteLose look delicious and I nice cupcake weapons! ;)
ReplyDeleteGreat tools! I have recently started using a stand mixer (a registry gift :) and I'm loving it. Makes baking so much easier.
ReplyDeleteThose cupcakes look delicious! I found your blog via the live laugh rowe blog hop. I am your newest follower. :)
ReplyDeleteI don't have any baking weapons because I don't bake. It stresses me out. If I HAVE to bake I make these peanut butter chocolate chip bars where you mix everything in a bowl and then dump it in a 9x13 pan. Fortunately, the bars are delicious so that makes up for the complete and total lack of presentation.
ReplyDeleteI think we should have treat day in the blogworld. You can send me cupcakes and I can eat them. Doesn't that sound like a stellar plan?
First off, those cupcakes look awesome. I wish I worked with you!
ReplyDeleteSecondly, I love pampered chef - have you used their iced tea pitcher (where you add the sugar and you can pump a lever for it to mix up everything)? My mom has it and it's amazing!
I almost licked my phone when you posted the pic of these on instagram last week.
ReplyDeleteOne of my baking weapons are AirBake insulated cookie sheets and pans. You cannot burn cookies with these. I also love silicone baking mats. Oh, and parchment paper-- makes clean up so much easier.
Treat day?! I don't get a treat day! I'm coming to yours from now on. Those cupcakes look amazing, and I'm adding those cupcake tools to my birthday wishlist . . . I am not good at pretty desserts. Mine look like Ike surprises AFTER I'm done baking and frosting them. These are going on my to-bake list . . . they look delicious!
ReplyDeleteANDES MINT CUPCAKES?!?! Those candies are my favorite and imaging them in a cupcake is dreamy. Anyone who brought those to work would be my hero.
ReplyDeleteYUM!!! I love those things. I would have probably eaten more than my share on treat day if I worked at your office. I need that cupcake dispenser. Seriously, my husband thinks I challenge myself to see how much of a mess I can make in the kitchen (I almost always beat my previous record).
ReplyDeleteI need the cupcake filler! I make such a mess filling the cups. I have the Pampered Chef decorating gun and I love it. It makes me look like Martha every time ;)
ReplyDeleteI need to start treat day at school.
Haha, Ike left a treat, that's funny! They look good. I like that cupcake batter machine too. That may make a great gift and result in more cupcakes around here.
ReplyDeleteIf I would have known that batter dispenser existed, I would have bought it years ago!! I usually try to put my batter in a big measuring cup and try to pour it that way...which results in a mess!
ReplyDeleteAlso, that icing thing is way cool...I use a gallon ziplock bag and it doesn't look pretty at all!
Thanks for sharing!
I love to bake and am thinking that I need that batter dispenser! I use the Wilton Decorator Plus, which is very similar to the Pampered Chef version ... except you can use a 40% off coupon at Michael's and grab it for $7!
ReplyDeleteI also made a great mint chocolate cupcake recently with an Andes ganache center. Here's another one of my favorites: http://www.examiner.com/article/st-patrick-s-day-recipe-chocolate-stout-and-whiskey-cupcakes-with-irish-cream
Chocolate Stout Cupcake with Whiskey Ganache and Bailey's Buttercream Frosting: I made them for St. Patrick's Day but would consider making them again soon ... they're THAT good.
I could use one of those cupcakes AND both of your baking weapons. They look so professional, and not at all like Ike's poo anymore.
ReplyDeleteWhoa, those look divine! Off to buy a batter dispenser!
ReplyDeleteOkay, the cupcakes look delicious, but I can't get by the words "Diet Coke." Blasphemy.
ReplyDeleteYum! Maybe the reason I can't cook is because I don't have the right tools, I sense a shopping trip coming on...
ReplyDeleteDelicious! I use an ice cream scoop to dole out my cupcake batter, but I'll have to try your way too:) Found you from Kelly, and now I'm going to follow and poke around a bit!

This is a dangerous, dangerous recipe to know about. I love the batter dispenser idea, because I always end up with burnt-on batter all over the cupcake tray, and then I have to leave it on the counter until Andy gets sick of seeing it and decides to scrub it for me.
