Blackberry Cobbler

If I haven’t yet convinced you to get yourself a cast iron skillet, this Blackberry Cobbler recipe just might do it.

This family favorite tastes even more delicious in a cast iron skillet.  But what doesn’t taste more delicious than something cooked in a pan coated in bacon grease?  Nothing is the correct answer.

Skillet Blackberry Cobbler from Decor and the Dog

The photography isn’t our finest. We made this for Nate’s dad’s birthday.  We made him sit and smell the deliciousness while we snapped photos. Happy birthday!!!

Start by mixing up the dough portion of this recipe.  In a large bowl, combine 2 cups flour, 1 cup sugar, 2 teaspoon baking powder and a teaspoon of salt.  Cut in butter until mixture looks like coarse crumbs. I used my hands.  Therefor there is no photo.  Stir in 1/4 cup boiling water just until moist.

In a separate bowl, dissolve cornstarch in 1/4 cup cold water.  Mix in 1 cup sugar, 1 tablespoon lemon juice and 4 cups of blackberries.  Transfer to your cast iron skillet and bring to a boil.  (We use our skillet on the side burner of our grill.)  Stir frequently.  You will get this.  Mmm, blackberries.

Drop dough into the skillet by spoonfuls.

Bake in a preheated oven at 400 degrees for ~25 minutes or until dough is golden brown.

Serve with ice cream or whipped cream.  Take a generous portion.  It’s fruit. It’s good for you. And then go for a run.  Because that’s healthy too.

YUM. it just so happens we have some blackberry bushes.... if you lived next door we could frolic on the hill and pick berries together, and when you made cobbler i would smell it from my window, and walk over and bring you a lovely cup of coffee or home made vanilla ice cream and we would sit and have our cobbler and ice cream together and talk, and we would be wearing pretty dresses with aprons and close toed shoes.

  4. I need a cast iron skillet!!! I am assuming this would work with other types of berries? I'm not a blackberry fan.......and I'm kinda dumb in the kitchen. :-)

  5. om nom nom. lazy tip: you can use the pillsbury sugar cookie roll, cut in slices, for the crust. (you'll need to extend your post-blackberry cobbler run though, so much for being lazy, haha)

  6. I 'borrowed' a well seasoned cast iron skillet several years ago from my grandma. It now lives at my house. Love it. I once caught my husband just as he prepared to put it in a sink full of soapy water. We'd only been married a couple months. I had to explain to him that washing my cast iron that way may lead to divorce. I'm a little stressed just remembering it. :)

  12. I love cobblers...but I don't think those blackberries would last long enough for me to MAKE anything with them. They would be in my tummy before I could get the recipe out. This looks delicious if someone else were to make it for me, though....so after you're done delivering one to Amy in Kansas feel free to drive on up to NY. ;)

  13. Yum that looks delicious. The only thing better than blackberry is blackberry in cake. I don't have a cast iron skillet, but now I think I have to have one ;)

    B and I are making Chocolate Eclairs today. Wish me luck - I am his assistant :) We made macaroons last weekend and they were fabulous!
