Mini Cinnamon Rolls

Nate and I normally like to eat a nice and healthy breakfast on Sundays.  And by nice and healthy, I mean horribly bad for us.  We try to eat healthy-ish during the week but splurge on the week-ends….especially Sunday morning.

We’ve been skipping our normal unhealthy breakfast for the past few Sundays to recover from the holidays.  This past Sunday we hopped back on the bad-for-us bandwagon.

I saw a recipe over at Iowa Girl Eats for 8 Minute Mini Cinnamon Rolls.  Sign me up!

Look at that concentration.  And the designer outfit.

This recipe is so easy that I made it 100% by myself without annoying Nate once.  Impressive.

I used the The Pioneer Woman's maple frosting recipe (minus the coffee) to top them off.  Delicious.

Crescent rolls.  Butter. Sugar.  Can you wrong?  Of course not!

Nate and I both thought these were a great substitute for homemade rolls.  Are they as good as homemade rolls?  No.  Were they just as good because they took 30 minutes instead of hours to make?  Yes!!  I think these would be great to serve at a brunch or shower beings that they are bite size and super easy to make.

Iowa Girl Eats recommends eating 2 or 3.

We may or may not have devoured the plateful.  Oops.

What’s your favorite breakfast dish?  AKA, what should I cook this week-end?  Do share!  Anyone else dumb enough to post pictures of themselves with bedhead on their blog? :)

  1. Woah. These look good. Mini versions are always better. Pioneer Woman really knows her stuff, especially when it comes to comfort foods. I've been wanting to test out coconut baked French toast for quite some time.

I like the bed head actually ;)

  2. Ok, these rolls are adorable and sound really tasty! We also go slightly unhealthy on the weekends. Saturdays, my husband makes pancakes (has ever since we got married) and on Sundays it's usually something fast like Pillsbury biscuits or rolls because I always have to be at church way early.

  4. We like to make a hashbrown casserole for breakfast on the weekends. Its basically a bag of loose hashbrowns, an onion, cream of something soup and grated cheese all mixed together with crushed potato chips on top. Its delicious, but virtually no nutritional value :)

  5. Looks delicious! Little ones are great because you can eat and few and not feel guilty! We usually make pancakes on Sundays. Have a great weekend!

  6. Um, these look amazing. And easy! We'll totally have to try them - I've always been scurred of homemade cinnamon rolls too.

  7. 2 or 3 crescent rolls covered in deliciousness? Seriously? What planet is she from? :-) I think I could eat that whole plate by myself. For real. I'm going to pin this for future making. ANd as a side note - have you ever made the Pioneer Woman's "real" cinnamon rolls? I keep thinking I want to try it and then get intimidated....

  8. Aw, they're so cute... and delicious-looking. Way to keep it real with the bedhead. B loves it when I make biscuits and gravy, or Belgian waffles, or chocolate chips pancakes. Basically he likes it when I cook anything because when I don't he's forced to eat from a box.

  9. Ooh...this looks delish! I can't blame you both for eating the whole thing. I love cinnamon rolls, especially cinnabon ones at the mall....oh, my, now I'm hungry. Love the outfit by the way ;)

  10. I have a lazy cinnamon roll recipe, too. And we also eat them all :) I like the idea of making them mini.

  11. Those look delicious. Nick usually makes bacon and eggs on the weekends. Well, he actually makes bacon and eggs every single day but I get to eat it on the weekends. I want cinnamon rolls now.

  12. I'm sure they are a step up from the Pilsbury cinnamon rolls we often eat here. I could handle making these, maybe sprinkle some bacon on top and call it a meal. Thanks for a new recipe to try out! The bedhead looks great btw, way to keep it real.

  13. Yum! And these are the moments I hate my celiac disease and gluten free diet. I'll be nice and make these for the office.

  14. So, by homemade, you mean the ones in the can in the refrigerated section? Because I wasn't aware there was another kind.

  15. Mmmmm unhealthy breakfast foods.
I like to make a Breakfast casserole in the crock pot, its delicioussssss... Mmm tater tots! Also, I make a mean French toast casserole. I may have to make that soon and share it.

Those look delicious and I'm getting hungry all over again even though I just had my English muffin :(

  16. Mmmmmmmmmmmmm, those look delicious. Yum! And look at you, being a big girl, making a fancypants breakfast all on your own! We made the croissant breakfast strata from Midwestern Living magazine for Christmas morning . . . I would definitely recommend it. Plus, you make it the night before and just bake it in the morning, so there's no groggy AM cooking! http://www.midwestliving.com/recipe/eggs/stuffed-croissant-breakfast-strata/

  17. Mouth watering!!! I mean mine. Watering right now! I made the Pioneer Woman cinnamon buns for Christmas morning and there was enough to make 7 trays so I froze them and pull a tray out every once in a while when I want to earn major mom brownie points. Try the coffee next time. I'm the only coffee drinker in the family but they all loved the flavour in the icing. Happy weekend!

  19. Those look delicious! I think my favorite weekend breakfast is pancakes and bacon. Not necessarily fast and easy, but really delicious!

  20. These are adorable. Is it weird to think food is adorable. Probably :)

  21. I make a pretty mean sausage/egg breakfast casserole. It is basically 75%cheesy goodness. Oh, and mimosas. Do those count?

Oh, and I was about to complain that there was no Ike in this post, but I saw that fuzzy little head on kitchen floor watch in the first picture :)

  22. I'm impressed that you were willing to share that plate with Nate! Andy knows he has to strike quickly if he wants to get anything sweet and homemade before it's gone. When I was in elementary school, a nutritionist came to talk to us and said that breakfast is such an important meal to start your day that it's better to eat a donut for breakfast than nothing. *Message received!*

  23. I have yet to post pictures of myself with bedhead on my blog, but it is entirely possible that I will someday. I have no shame. My daily breakfast consists of plain Shredded Wheat (sweet stuff makes me sick in the morning...I'm boring and lame and old-ladyish, I know) so I have no great suggestions for recipes. I guess that means you just have to make the cinnamon rolls again. :)

  24. hahaha! Ike waiting patiently by the counter for a cinnamon roll to drop! He's such a dog...

If you want something a little less sweet than iced cinnamon rolls, you could try my "Lazy Scones". They're almost "healthy" (unless you pile them with a ton of fresh whipped cream...)

  25. Those look WAY better than the grapefruit and hard boiled egg I had for breakfast. I think I deserve a splurge day tomorrow.

  26. Wow, baby - those look awesome! Eat something terrible in memory of me (and my stupid healthy breakfast) on Sunday =)

  27. umm YUM! those look delicious! i think my mom made those same things on saturday right before she came over to my house...and she didn't bring me any, just raved about them. nice, Mom.
