Loaded “Baked Potato” Soup

Fall has hit the Midwest.  I had to bust out my flannel Christmas tree pants last night.  That’s how cold it got.  Please don’t call those crazy folks at “What Not to Wear” on me.  I will never give up the Christmas tree pants.

My dear friend, Amanda, is visiting from Reno this week.  We had her over for supper the other night…

I never know what to make when we have people over.  I’m a horrible host.  Oh yeah, I don’t cook either. Minor detail. Luckily Nate is a good chef and he whipped us up a delicious supper. 

What’d he make?  Loaded "baked potato" soup!  One of my favorites!

The recipe is originally from Kraft but Nate has doctored it a bit.

Loaded “Baked Potato” Soup

  • Southern Style Hash browns (1 bag)
  • 3 cans chicken broth
  • 3 cups milk
  • 12 pieces of bacon (we go with the easy microwave kind)
  • 2 1/2 cups shredded cheddar cheese
  • 1 green onion (diced)

Combine broth, milk, and green onion in stock pot.  Once hot, add hash browns.  Cook hash browns until mushy (technical term).  Mash with potato masher (one of my favorite utensils..after the whisk).  Add bacon.  Simmer for about 5 minutes.  Add cheese.  Simmer for about 5 minutes.  Add flour to thicken to desired consistency.  Enjoy!

We like to eat it with Rhodes frozen bread.  Mmmmm, carbs.

We forgot to photograph this until after supper so excuse the mess.  It is one of the most delicious things you will eat. I promise.  Can you go wrong with cheese and bacon?  I didn’t think so.

  1. I've been wanting to make a potato soup. Maybe I'll have to try this. (Although I'll have to take out the bacon cause it makes me gag just thinking about it.)

  4. Besides being a fabricaholic I"m also a soupaholic. Gotta try this although being a vegetarian I'm gonna have to eliminate the bacon. Do you promise to still love me if I don't add the bacon???

  7. Mmmm soup. I especially like it with some homemade bread, especially as these days turn into fall.

    Don't feel bad--if What Not to Wear finds you, they'll have to find me too, because I also busted out my Christmas tree flannel pj pants last night. I have had them since middle school. I should probably get some new ones...

  8. Yummmm. At this very moment, I'm eating a creamy taco soup actually made with loads of heavy cream. So bacon and cheese sounds like a perfect follow-up!

    PS - I can't wait for the day it's cold enough to bust out my reindeer PJ pants.

  10. That looks amazing! When we have people over, I throw some pearl onions, and quartered artichoke hearts in 9x13 pan with 1/2 cup chicken broth, pop some chicken breasts on top of those, and top with rosemary, thyme, a drizzle of olive oil, and crumbled goat cheese. Throw it all in the over for 50 minutes at 375 and it's ready to go! =)

  13. SO *bleepin'* jealous of your chilly weather! We were stoked the other day because it got down in to the 80's...stupid Phoenix! I really miss my chilly fall weather and hot soup! Everyone knows soup is 10x better in cold weather (c:

  15. I MADE THE BLOG!! :o) I told Mom and made sure she read it. She said we were "beautiful, young women" in the first picture. She was not so impressed with me in the second picture. I aim to make her proud on a daily basis.... Thanks again for having me over. It was really good to see you and Nate again. And, for the record, the soup was fantastic! I will definitely be making this recipe. You are an amazing friend!

  17. Fall is not quite here in Texas, but I can't wait to start serving soups and stews. This looks delicious. It needs to be a bit cooler before I start serving soup.
